Ashley Mullins is a registered dietitian with expertise in clinical nutrition and healthcare management, and currently serves as an Assistant Professor of Professional Practice at Texas Christian University. She brings 20 years of experience in a variety of practice areas, including clinical nutrition, academic instruction, and program leadership, including roles at Aramark at  Baylor Scott & White and Baylor University Medical Center, where she led the internship program, managed clinical teams, and directed accreditation efforts. At TCU, she serves as both Graduate Director and Program Director for the ACEND-accredited Coordinated Graduate Program in Dietetics, overseeing curriculum development, accreditation compliance, student recruitment, and clinical site and preceptor partnerships. She teaches undergraduate and graduate courses for students completing professional practice, with an emphasis on experiential learning, interprofessional education, leadership development, and career guidance and preparation. Her service includes active roles on departmental and college committees, including the Faculty Advisory Board for the Koehler Center, graduate and undergraduate advising, and national service as an ACEND site reviewer.
